I do NOT want updates on the covid !! How do i stop that update

if you want to turn of auto updates.. just go to Settings > General > Software Update > Customize Automatic Updates.. turn off those switches.

You'll basically never be updating your phone again

You should read more about the exposure notifications. there is nothing that tracks you. you have complete control, you do not have to download a tracing app, you do not have to opt in.
