I've already ordered the Stainless Steel. Just got off with an Apple Store Sales Specialist (don't call tech support, they won't know) and they confirmed the Stainless Steel, Titanium and Hermes have sapphire crystals.

Yes. This from apple.com/watch/compare:
“Aluminum models have Ion-X glass displays. Stainless steel and titanium models have sapphire crystal displays.”
As someone else has said, Apple have clarified to Slash Gear.
Also, on the Hermes site there is a photo of the back of the watch, and it does say Sapphire crystal. Previously the Hermes ones have been the same as the stainless steel ones, I assume this is still the case although the Hermes watches come in space black whereas the non-Hermes are graphite now... still, 2 pieces of evidence suggesting the sapphire crystal is still used which is a relief. Not sure why they don't state that on the Apple site.... perhaps they are gearing up to get rid of it in the future....
Since they made no announcement of any change I think it is a safe bet the Apple Watch SE and aluminum Series 6 have ION-X and the Stainless Steel, Titanium and Hermes have sapphire.
If it doesn't say in the specs there is no way anyone can tell you. Contact - Official Apple Support maybe they can help you.
That is NOT correct, anyone who has worn sapphire crystals on their watches (which I've done for over 50 years) knows they will shatter far easier that any type of glass crystal, including ION-X. I'm not talking cracks, I'm talking shattering. Been there, done that, still have the watches that shattered (crystals were replaced). You can check any watch site out there and confirm this. It is the one weakness of sapphire crystals so the thing to do is avoid direct center hits on the crystal.
That said I always opt for the sapphire because scratches are far, far more likely to occur than actually a direct hit and I don't like scratches. Here's hoping they continued with sapphire on the SS/Titanium/Hermes watches otherwise they are vastly overpriced.
The sapphire is more scratch resistant which is why I like it but it is also more likely to shatter if you strike it on something than the ION-X. Wait to order it if you feel that way.
If you order now you are going to have a 3 - 4 week wait for it anyway and you may have the information by then. Or you can return it when you get it.
We hope that's the case, but in all previous Apple Watch editions since the very first Apple Watch that I've been lucky enough to own, Apple has always stated screen material. Maybe this time it's just an oversight to the advertising literature, but I'd certainly feel much happier knowing it was for certain. The sapphire glass used by Apple is without doubt a strong and more durable material from experience than that of Ion-x they use.
That's very true, and did already order two series 6 titanium editions having been extremely happy with the series 5 titanium editions that have handled everyday use extremely well over the past year.
However, if they are without Sapphire glass, then that would be a significant disappointment and ultimately for return to Apple.
Vitally important information; Please advise when an official statement is made.
This is a strange discrepancy versus previous releases in terms of data.
None of us on the forums work for Apple, we are users helping others when we can. We have no idea when or if an announcement will be made.
I’ve also asked multiple phone sales support reps and no one can give an answer on the screen material.
This is incorrect. Sapphire glass is more durable to both scratches and cracks. It is superior to ION-X in every way.
Absolutely agree, and exactly why it's important to me to be certain the latest series 6 Edition is equally with Sapphire glass. But yet after hours of searching online, I'm non the wiser.
