Is there a way to disable the App Library, so that I don’t have to see it at all? I don’t have many apps, don’t need them categorized, and don’t need to search them, so I’d prefer to just turn it off altogether so that I don’t see it if I happen to swipe right too many times. Thanks!

You can't shut it off. You cannot roll back to a previous iOS. You'll just have to "suffer" through not using it, since it's so "horrible" for you.

No, Apple can’t and won’t tell you why the App Library is mandatory. It is a feature Apple added to iOS 14. And Apple won’t tell you anything in this user-to-user forum where Apple doesn’t participate.
I’ll just point out that from the very beginning Apple has never been big on providing multiple options.

Meanwhile, try putting your frequently used apps on the first page. You can always get to that quickly. You can also put your most favorites in the bar at the bottom of the screen.
And you got a similar entertaining answer. Apple tends to shy away from unnecessary software switches as it adds potential problems where it is not needed. All one has to do is not go to the last page and it will never be seen.

So don't use it. Carry on using your existing home screens if you prefer. The App Library is situated beyond the last home screen - a place you would never go if you weren't actually looking for it. (Or hadn't become utterly obsessed with it).
I got rid of the App Library by resetting my iPhone 12 Pro Max.
I went to Settings-->General-->Reset-->Erase All Content and Settings.
This turned it into a blank iPhone.
I set it up as a new phone again and restored from a backup on my iMac.
Only took bout 20 minutes.
Now, the offensive App Library is gone.
Therefore it's clear this is intentionally a forced usage feature (for some reason no one can figure out) which is the only thing anyone on here is mentioning their distaste for.
Which makes it an Apple Policy issue and the terms we are all bound by here, do not permit discussing Apple Policy.
