It's likely the iPhone 7 and 7 Plus do not have the hardware required to recognize a back tap.

The iOS 14 page gives the following requirements:

Works with iPhone 8, iPhone 8 Plus, iPhone X, iPhone XS, iPhone XS Max, iPhone XR, iPhone 11, iPhone 11 Pro, and iPhone 11 Pro Max.

Yeah, I know it doesn't work on my phone, but I ask why they don't do it in another phone “6/7” I mean they do everything else and everything works, so why don't they make it work on 6/7 ?

As I said, it's likely older phones lack any hardware for detecting a tap on the back of the phone.

You can't respond to a stimulus you can't sense.
