Thanks for reaching out to Apple Support Communities. We understand that you are currently using iOS 14, however the Siri UI is not updated. We will be glad to assist. Let's check the following setting:
Settings > Accessibility > Siri > Type To Siri. If "Type To Siri" is enabled, turn it off and restart your iPhone to see if it updates the Siri icon.
If the issue persist, Contact Apple for support and service
