The date option has disappeared from all of my watch faces after the new update. I have restarted my paired phone and watch with no luck.

Make sure that you have the Default Apple Calendar app installed.
So if you don’t have the apple calendar that comes standard with the phone downloaded then it won’t give you the option for calendar complications. I assumed this was the issue because I deleted mines because I use google calendar for everything and getting double notifications for everything was annoying. Once I reinstalled the calendar from apple the option for the complications came up and I was able to add the date to my watch face.
