Unable to open notifications with a single touch in IOS 14

It is due to turning off FaceID for certain things.  I had turned off "iPhone unlock" with Face ID because I hate that you lose the ability to set "require passcode" to 4 hours because I hate having it turned on for immediately. I checked "unlock iPhone" to allow for that with Face ID and the single tap came back.

I have the same issue. The other reply unfortunately doesn’t fix this as this is not a haptic response issue. This is just a single tap to open a notification which now leads to seeing “open” appear to the left.

Change 3D or Haptic Touch sensitivity on your iPhone

1. Go to Settings and tap Accessibility.
2. Tap Touch, then tap 3D & Haptic Touch. Depending on the device you have, you might see 3D Touch or Haptic Touch only.*
3. Turn on the feature, then use the slider to select a sensitivity level.
