Cannot pair Apple Watch Series 1 to iPhone 6s Plus

I am unable to pair my Apple watch, series 1 to iPhone 6s plus. It says software is out of date. However, under Settings>General> Software update, my iPhone has iOS 12.4.8 and states software is up to date. There's no option for a software update. What can I do to pair the two? Thanks.

Update/ Correction: my iPhone is 6 plus (not 6s). Called Apple Support. I need to send the watch back and they will download an earlier software version of the watch. Apple Support was very helpful.
