would there be any issues if you bought an iPad in America and brought it back to Ireland?

Technically the iPad will work.

Consider this...

If you purchase the iPad in any member state of the EU, your Warranty and Purchase rights must be honoured anywhere within the EU - in addition to the Apple limited warranty. The statutory comprehensive EU warranty lasts two years.

If you purchase within and export from the US, Apple have absolute discretion to grant and/or decline warranty service outside of the region in which the item is purchased. The Apple limited warranty, if honoured, is one year.

Thanks a million for your quick response. I read somewhere that there may be issues with repairs, would I have to send it back to America for repairs or could I bring it to any apple store? I assume I would only have to return it to America if it is faulty out of the box. I assume there would be no issues with updates either. So to summarize if I got a wifi only iPad from America it would be no different then buying it in Ireland(except for it may void the warranty)?
