iwatch will not update with iOS 14

iwatch version 3 does not have enough memory. I have deleted all apps but still not enough storage

Try unpairing and pairing your watch again and restoring from the backup. This deletes all temp and corrupted files and re-indexes the file system. This helps free a lot of space. If you don’t have enough space to update your Apple Watch - Apple Support

When you repair to your phone it should give you a choice to use a backup that was created when you unpaired.
