How to edit/ delete Mail recipients?

When I type a name in Mail (on MacBook/ Catalina) to send then after a couple of letters a list of previous recipients of my mail appears. Some are old and I wish to delete, some are incorrectly capitalized. I checked in my Contacts application and deleted the names but they still appear in Mail.

So how do I delete and /or edit these names?

How do I remove Mail recipients from Mail in macOS Catalina? When I go to create a new email and I type the first letter of someones name it automatically puts an email address I responded to like months ago. That email address is NOT in my Contacts and it doesn't show up in Previous Recipients. I can right click it and click remove but it comes right back as soon as I type that first letter. I have everything Siri turned off so it's odd that it shows Siri found in apps above the email address. This is only one example as it will place other email addresses in the TO: section if I type say an "s" it will put my cable companies email address in there.

Unwanted entry in blank mail message New mail message in Apple Mail v14.0 running on Big Sur OS 11.1 pops up with email address in the BCC box of one of my contacts. I cannot get a blank message to appear. How do I permanently remove this unwanted BCC name?

Window Menu > Previous Recipients.
