Since upgrading to iPad OS 14, every book I open in Books for iOS shows two pages side by side in a “newspaper column” type view. I want to revert to a single page view but cannot find anywhere to do this. I absolutely hate this view.

iOS 14.2 fixed this problem for me as far as I can tell.
OK, just so I’m clear. This is only a workaround, and by changing fonts and increasing size, I mean different fonts and larger sizes until it works (eventually it will). However, different books are effected differently by this depend publisher decisions.
Also it appears — at least on some cases — switching to Verticle Scrolling cancels it.

Thank you. A temporary fix is to delete the book app and reinstall. Changing font size then works as a workaround.
How do I access the public beta for 14.2?
Since upgrading to iOS 14.2 reading problem is solve even though it is still slow to open ebook
That's wired. My iPad is always showing me single page view since upgrading to iPad OS 14, and what I want is two pages side by side!
Thanks for the suggestion. In Books for iOS, I cycled through every font. There are two selection buttons for size, small and large. After selecting the new font, I cycled between sizes (small to large.)
Unfortunately, it did not change the view to single page. I am able to go to a single page view changing to vertical scrolling but do not prefer scrolling. Turning off scrolling reverts the view back to the two columns.
iOS 14 bug? Very frustrating. I do appreciate your suggestions though.
Unfortunately, neither worked. The font and size change but the “two column” view remains.
Good news, everyone! I just downloaded the most recent iPad OS 14.2 public beta, and they fixed it!

Why does Apple always try to fix something that is not broken. I want my full page display without using scrolling and without having to use larger fonts... I am not blind
Okay changing to vertical works to get rid of newspaper view but I hate scrolling I like to tab to turn to next page. How do you put it back ??? Worst update ever apple!

Yes, I have the same issue as well even if I have updated into iOS 14.2. Only vertical viewing works for single page view. But since I use iPad to read books, I still have to suffer this newspaper view. Definitely an unnecessary update!
