iBooks single page view gone after upgrade to iPad OS 14

Since upgrading to iPad OS 14, every book I open in Books for iOS shows two pages side by side in a “newspaper column” type view. I want to revert to a single page view but cannot find anywhere to do this. I absolutely hate this view.

Can someone help?

iBooks forgets View option from previous session? I have had this problem since Mac High Sierra and on different machines and different builds. If I select View -> Sort-by -> Most Recent in iBooks it sometimes (more often than not) reverts to Title. Any idea how to have this setting fixed? On iOS it remembers this setting fine so I don't think its those two apps interacting badly. Thanks.

Change fonts or increase the font size.
