Back-ups Saved on iTunes, can I retrieve them through Apple Music?

Back in 2018, my phone was crushed and I could not longer use it. However, the last back-up from my iPhone 7 was back in June 2018 and the back up was located on my iTunes on my MacBook Pro. I have now updated the Operating System, would I still be able to retrieve that download through Apple Music app?

If not, would it be possible, to take the SIM card out of that phone and still have access to my pictures?

Please advise.

With the current operating system the backup is restored using Finder. You should be able to use the backup that was made in iTunes to setup another device. See the "Restore your device from a backup on your computer" section of Restore your iPhone, iPad, or iPod touch from a backup - Apple Support

The iPhone does not store photos or any other user data on the SIM.

The other possibility is if you had iCloud Photos turned on you can use any computer and log into www.icloud.com and see the photos there. If you didn't have iCloud Photos turned on but did have iCloud Backup turned on you could use that backup to setup another device.
