Hey there! I see no one has answered your question. To get straight to the point, the iPod itself can not be "hacked" unless you had knowingly jailbroken the software and made it vulnerable. Notes will change their arrangement based on the last updated note. So if you typed something into a note, backspaced or modified the note in any way, the most recently modified note will appear at the top, that is expected behavior. If you yourself did not modify a note, I would suggest you reset the password to your Apple ID and encourage you to use 2 factor authentication to protect your data.
