Has anyone else experienced significant delays in texting since updating to ios14? I will start to text several words and it’s as if the messaging app freezes and none of the words appear for a few seconds, then they all appear at once.

Have you reset your network settings?
Go to Settings - General - Reset -Reset Network Settings.
This also resets Wi-Fi networks and passwords, cellular settings, and VPN and APN settings that you've used before.
toggling iMessage off and back on seems to fix the issue. Not sure if it’s just a temporary fix or not though like resetting the network settings but it fixed the delay issue for me (see below)
Not just in texting but while typing in notes too. Suggestions?
Yes! also having the same problem.. but not just texting, any typing in any app.
Same for me. It happens with any type of typing, not just messaging. Super annoying!

Definitely happens in the Messaging app each time I try to type a message.

Try to reset your network settings. It also happened to me and after doing resetting the network settings, a week worth of iMessages arrived. I thought no one was messaging me!
