Sold iPhone 6

I recently sold my iPhone 6 and I’m not sure whether o erased all content and settings.

can I delete the contents remotely and will the new user be able to restore all my deleted stuff with other third party applications from iCloud even if they don’t have my password for iCloud?

I bought used iPhone XR but the person who sold it to me haven't deleted all the data I have bought used iPhone XR, but in a really good condition, checked everything. The person who sold it to me haven't deleted all the photos and data from it, and it haven't been progressed since the Restarting started. Is that normal, or not? [Re-Titled by Moderator]
