Can I downgrade my iphone after downloading the latest IOS?

Hi

I am using a mac - Mojave 10.14.6. I never upgraded because I don't want to change to apple music. I like itunes and don't want to chance losing all of the playlists that I have set up in itunes. My library is on a 4TB external drive.

My iphone is an 8 Plus. Software just downloaded is 14.0.1 and this new version will not let me sync my itunes with the Mac without upgrading my mac. Can I get back to the previous IOS somehow?

iPhone 8 Plus, iOS 14

According to: Fix the 'Software Update Is Required to Connect to Your iPhone' Warning on Your Mac you are not being prompted to upgrade your Mojave Software if this is the prompt you are reporting:

"...simply click on "Install" to update the software needed to get your iOS device working with iTunes again on an older macOS version."
