Since installing Catalina 10.15.7 when trying to do a copy paste I'm having trouble. It seems that the clipboard (is that what Mac calls it?) is not bringing in the most recent copy when I give the paste command. It will paste in something that I copied hours before instead. It takes me several times to try to copy and paste before it will finally bring in the most recently copied item. My boyfriend is having the same problem on his devices. This is happening on both my iMac 2019 and my MacBook Pro 2020.

Boot into Safe Mode (How to use safe mode on your Mac - Apple Support) by booting with the Shift key held down and check there to see if the problem persists.  Reboot normally and test again.

NOTE: Safe Mode boot can take up to 10 minutes as it's doing the following;
• Verifies your startup disk and attempts to repair directory issues, if needed
• Loads only required kernel extensions (prevents 3rd party extensions from loading)
• Prevents Startup Items and Login Items from opening automatically
• Disables user-installed fonts
• Deletes font caches, kernel cache, and other system cache files
