I've also tried the Permissions - the kids just reset it back. The kids have no self control, and short of deleting it. Screen Time is useless in that it's a Java app and somehow bypasses Screen Time. You can pick on the minutae of how it's not working - but I simply want to effectively and reasonably grant 1 hr each time to Minecraft - NOT 12 hrs -- to the kids.
Note @Tim Cook - please shore up your Screen Time features !
Yes, I've resorted to deleting it. I will put the install dmg and maybe reinstall on the Fridays and then delete on Sunday night.
This is still a terrible solution - my time to do this manually on the weekends.
Even worse - on the weekends it's a free-for-all - they can still play all day. Screentime has NO effect on Minecraft Java app.

How are the kids resetting the permissions?
My parents would have punished me like crazy and would have removed the game from the computer if I disobeyed their instructions and rules. Temporarily uninstalling the game can be a good eye opener for the disobedient kids.
I should have been clear - I meant on iMac - OSX. Since it is running Java Minecraft (no other choice), Screentime seems to have no effect. Actually you can't even see it as an app to set limits on.
This is a big hole in the Screentime.
How to do parental control on Minecraft ? Screen Time is useless.
