How to back up my phone in iTunes to my Laptop

How to back up my phone (in iTunes) to my Laptop?

I have windows 10 and I have uploaded new version of iTunes on my laptop.

I no longer have an option to back up my phone to the laptop which was there previously and i only assume my phone is being backed up to the icloud now?

Also I dont have the itunes icon anymore even after creating the shortcut..
