I sometimes accidentally press Option-Command-Backspace while in Mail (meaning to press the key above the backspace, to turn off the screen). This mistake causes the highlighted email to completely disappear, seemingly irretrievably. How can I disable this behaviour? It is so frustrating to lose an email, sometimes an important one, from all my devices due to a single wrong keypress!

Thanks. I have tried to do as instructed in the link you posted, but without success. When I click in the Keyboard Shortcut field and type the key combination Option-Command-Backspace the Add button remains greyed out and I hear a small "beep". I can't work out what I am doing wrong?

You don't need the Window→ part, but that doesn't matter. It won't take the delete key as a shortcut with any modifier. I seem to remember that working in the past, but I'm not certain about that. You'll have to avoid typing that key combination with Mail active.
Create an application shortcut for Mail using that key combination for something else that won't cause any problems, like Bring All to Front.
