Lagging when typing on Notes — iPadOS 14.1
The time lag spans between 2 – 3 seconds which is super annoying as I’m a speed typer.
It’s happening to both of my iPad Pro and iPad Air running iPadOS 14.1.

It sounds like you're running into issues when typing using Notes.
If you haven't already, try restarting the device: Restart your iPhone. Also go to Settings > General > Keyboard > Keyboards to check if the original keyboard is listed here and selected. If not, temporarily change to the QWERTY keyboard, which you will see after selecting your language, then test to see if the same issue persists.
