If you delete an AOL email account from your MAC or IOS Mail app, will you lose access to the mail folders associated with the deleted AOL mail account in Mail? Further, If you then add back the deleted account, will access to those folders be restored?

Deleting an email account from your Mac or iPhone will indeed remove all its mailboxes (folders) from the device. When you add the account again, the folders will be restored from the mail server.

It depends on what type of account it is. POP will not be restored. IMAP stores the messages on the server, so they will be restored.
