For an iPhone 7 Plus: Will switching the sim card for a new one also create a new Apple ID, iCloud, iTunes & App Store?

My ex-wife gave her iPhone 7 Plus (fully owned and paid for) to our daughter the day before my ex-wife went to jail. At first, my ex-wife still had a Sprint service line on the phone, but she disconnected it several weeks later (yes, from jail). The phone after that point did not have service, but all the apps still worked; however, the phone was/is still under my ex-wife's Apple ID, iTunes, etc. We couldn't and can't update any apps or download new ones because we need to use my ex-wife's username and password, and I do not want to go that route. Instead, I would like to know if I can 'reset' the phone, or delete my ex-wife's Apple ID from being associated with that phone, and then allow my daughter to continue using the phone, but with a new Apple ID.

Will changing the SIM card resolve this? If not, is there a way?

iPhone 7 Plus, iOS 13

Changing the SIM won't affect the Apple ID. Also, there isn't any known way to change the Apple ID without the password. See information in Turn off Activation Lock - Apple Support
