I used the migration assistant to transfer from my PC to my new Mac pro . It told me I had 73 hours and 51 minutes last night. This morning it said 20 hours and 21 minutes. It stayed on 20 hours for my entire 8 hour work day. I am confused as to how long it should take?

If you have the two computers connected together with a USB cord, it should be completed within an hour, more or less. If you are using Wi-Fi, it likely will never be done correctly as the data is often corrupted.
