Hulu supported devices - Hulu Help Center. Apple TV (2nd generation) is no longer supported, since August 27, 2020.
Exactly what happens when you try?
Did you try subscribing with Hulu directly, or did you try subscribing in-app through Apple? If one failed, have you tried the other?
