Can the erase function on icloud be compromised in anyway?

Basically my iphone 11 was stolen a few days ago, I've gone to icloud to start erasing which took a day to do because my stolen phone was offline leading to a pending. However, It was only till the next day that I received an email from icloud that my iphone has been erased or is in the process to do so. Even though i have gotten the confirmation email, i wanted to ask if it could have been a false erase? Like can the person who stole the iphone just be able to turn off the iphone when the erasure process takes place and cancel it, prompting a premature email saying that it has been erased or do they have a way to fake the process. Ive just been very stressed out and paranoid about my data being being taken and is constantly been on edge for the past week.

The individual(s) who stole the device cannot cancel the erase process initiated by you.
