Transition to iPhone 11 Pro

I am transitioning my senior citizen brain from the iPhone 8 to the 11-Pro. If anyone can help me with these questions - most critically the first two - I will be so appreciative!

1) I like the “swipe-up” to move from whatever app you’re using to the Home Screen, but it’s tedious to go back to things I was just doing before since the “windows” aren’t the anymore. Say I’m browsing for a book in Overdrive, but I need to stop to make a call, so I of course swipe up to get to the phone. This closes the Overdrive app. After I’m done with the call, in order to get back to Overdrive I need to find and open the folder its in, then open the app, which in turn makes me start at the beginning of my search. It’s driving me mad. I can’t say I miss double-tapping to view all my open apps, but it was actually better than having to re-open everything serially when I want to go back to them...especially when I have to start at the beginning of what I was doing on the apps.

2). Where is the WONDERFUL screen we had in earlier iPhones (where you swiped up) where you could control whether you allow screen rotation, could toggle Bluetooth and WiFi, have access to the flashlight, camera and calculator, etc? I am bereft. I know some of them are distributed here or there but not all in the same place.

3) Is there any reason that God or Apple can’t give us an Undo option in text and email on the iPhone?

4) Is it impossible to rotate the iPhone 11 180 degrees, so you can view it upside down?

5) I can’t find a way to to display to my TV. Used to be there was a list of output devices to choose from?

6) Most importantly....why is the “Last Emoji Used” section of the Emoji options showing goofy emojis I have never used and never will?

Thank you!
