IGiving my wife a shared iphone 7 and I'm moving to an android phone using the iphone sim. How to avoid issues?

Welcome to Apple Support Communities. We understand that you would like to give your wife the iPhone 7 that you've been using, and do not wish to remove any of the data. 

To leave the messages and photos on the iPhone, you'll want to be sure that you have turned off Messages in iCloud, and turned off iCloud Photos. This will allow the Messages and photos to remain on the device after you sign out of your iCloud ID. This article will show you where you can find the settings in iCloud: Change your iCloud feature settings.

You will also need to deregister iMessage on the iPhone before you transfer the SIM to your Android phone: Deregister iMessage on your iPhone or online.

Nothing is stored on the SIM card by an iPhone.

best bet is wipe the phone and have her set it up as a new device.

Any apps you bought are forever tied to the Apple ID used to download them. Better to start fresh.
