I am trying to backup my iPhone 8 so I can 'start up' my new iPhone. My finder is saying "Couldn't communicate with a helper application". What should I do to back up my phone before I set up my new one?

Try updating your iPhone to IOS 14 and try again. If this still doesn't work restart your iPhone and Finder:
Computer:
command+option+escape select finder and hit enter then click "ok" .
iPhone:
Hold the side button until the slide to power off option pops up, then slide to power off. Wait a minute and hold the side button until the Apple logo pops up on your screen.
This will restart Finder/iPhone and you can try to Backup your iPhone again from your computer. If your Mac is running version 14.0 or earlier you have to backup the iPhone from iTunes, if you are running 15.0 or later you can do it from Finder. You will have to make a password or use another password when backing up your iPhone. When backing up your iPhone it is advised to write down the password and keep it somewhere safe until you need to use it again (People have forgotten their password and lost all of the information on that iPhone before). You can also backup the phone to icloud, you get 5 GB of free storage and if you need more you can get extra space starting at 50 GB for 0.99 (USD).

This problem is usually caused by a component of itunes/music being on an external drive.
Edit to add, my cloud is 'full'.
Do you have any portion of Catalina or data on an external or NAS drive?
