Typing on the keyboard provides no feedback. Haptic vibrations work elsewhere on the phone - but there is no response on the keyboard.

There is Haptic feedback for the Keyboard keys. There is, however, Keyboard Clicks (sound) available when you press a Key.
Open Settings ➔ Sounds & Haptics ➔ Keyboard Clicks : Set this to ON.

As much as I abhor Google's privacy practices (or lack thereof), that's exactly what I was looking for. I had forgotten GBoard was available (and Yeah, would rather not use google anything).
