Eventually, and it may already be present, expect a Catalina's System Preferences : Software Update to offer a new HP Printer Drivers v5.1 Update for you to install. Once that is installed, and you have rebooted, visit System Preferences : Printers & Scanners panel.

Right-click on your connected/powered HP device and select Reset printing system… from the secondary menu. This will remove that entry, and offer a dialog to re-add the device from your selection of the appropriate HP driver. Once it has been re-added, right-click on the Printers & Scanners entry, and select Set default printer. At this point, your HP device should resume working.

There was no 5.1 driver package after downloading the latest Catalina. I was assuming that was included. I did reset the printing system after the Catalina download. Printer: HP OfficeJet Pro 8710. I downloaded the HP Smart app and it works. I haven't figured out how to resize the image I want to scan, but for general page scanning, it functions. So, is the bottom line no more printing from System Preferences?

So there is no 5.1 package for your printer, click on this link below,

https://support.hp.com/gb-en/drivers/selfservice/hp-officejet-pro-8710-all-in-one-printer-series/7902014

Make sure the operating selector is set for macOS 10.15.

Click all the plus boxes to reveal the downloads available for you.

Download and then install them.

Reset your printing system.

You should be able to print and scan from System Preferences.

Also try the Image Capture App in the Applications folder.

Pressing Show Details will give you more options.

Have you got the HP Scan app, try the App Store.

The HP Printer Driver Package 5.1 does not include and never did include drivers for your HP Officejet 8710, that is why you are not being offered it, so stop looking.

Have you downloaded the updates available to you from the HP page in the link above, it does not matter if they

were released before the certificate expired. The firmware update might be important and allow the printer to download

any new software when resetting the printing system. If you click on the link to HP again and click on the + next to driver

you will see HP have released a new version of HP Easy Start on November the 2nd, downloading, installing and running

that should search for any updated software, firmware etc.

Are you resetting the printing system correctly.

Open System Preferences> Printers & Scanners.

Control-click while the pointer is in the left hand panel, Reset Printing System should pop up, click on that,

you will be asked if you are sure you want to reset the printing system, press Reset.

Resetting will take place, it will take a minute or two.

Make sure your mac is connected to the internet, and your printer connected by cable to your mac

and your mac connected by cable to your router.

Click the + button in the left panel and add your printer back in.

At Default Printer select HP Officejet Pro 8710, this should force a search for any new software etc.

I also notice that your printer is an AirPrint printer, which means it should print over WiFi without

the need for manufacturer drivers.
