I am interested in the newest watch series 6 gps/cellular. My question is if my phone is at home and I go for a walk, can I use my watch with cellular to call someone or to listen to my audible book? Hope that makes sense.

Here are things that you can do with the Apple Watch without the paired phone nearby. Remember, you would need to have cellular activated on the device to use it without the paired iPhone. Use your Apple Watch without your iPhone nearby - Apple Support. But to be more direct to your question, calls and Audible books would work, you just need headphones for Audible.
