how do I get my iPad to update software to ios14 it has recently updated to 12.4.9 and some apps will no longer work the auto update says my software is up to dat

I'm afraid your iPad Air is not a 2nd generation model.
Ipad Air 1st generation doesn't support iOS versions beyond 12.4.9, because of hardware incompatibility, sorry.

Probably that app developer team decided not to keep their app compatible with that iOS version.
If you look at this page (at section "Information"), you'll discover that now that app needs iOS/iPadOS version13 or later:--> https://apps.apple.com/app/microsoft-outlook/id951937596

Microsoft has a declared policy, for their core Productivity Apps, of only supporting the current and preceding major versions of iOS/iPadOS.
As such, the currently available versions of Outlook, Word, Excel, PowerPoint etc. all require iOS/iPadOS 13.x or 14.x.
