iPhone dims while doing demanding things
Is it normal for my iPhone XS Max’s screen to dim while doing demanding things such as gaming, high quality streaming, etc? If so, is there a setting to change this?

Yes, that is normal.
To prevent overheating iPhones will dim their displays when they get excessively hot, which is usually triggered by playing an intense game or something similar.
There is no way to turn this off.
