Are those temps in F or C?
Many modern SSD drives contain self-throttling circuits that slow down the effective throughput when the chip gets too hot. That is why modern SSDs tend to have integrated (or applied) heatsinks.
Your Mac can run all day every day at 60 degrees C without any issues whatsovever. When it approaches 100 degrees C, the fans will already be at maximum and you may experience an uncontrolled power off to save itself.
The fans speeds are set to LOWER levels several time a second by the System Management Controller or its successor in the T2 chip. If they do not get set lower, they will revert to Maximum within a few seconds (Fail Safe).
You are worrying about this for nothing. The computer is very capable of taking care of itself. We expect YOU to be doing great things with these great tools, not fretting about things the computer already has well under control.
