Since updating to Big Sur, Preview will no longer allow me to adjust photo resolution when I export photos as JPG. I need this for my job, speed counts. Any thoughts?

So clearly it's a bug. Hope Apple fixes this.
The simplest work around I found is this: https://compressnow.com/
A very simple drag and drop with a slider to adjust the final size. (Even if the preview is distorted the end result is good)

"Another alternative would be to create your design as an original 600 dpi vector image in Affinity Designer, and then save that directly to a 600 dpi PNG from the application. It is a workaround! I use an older MacBook Air and I thought I might have to revert back to Catalina, but this does sort it. There is a 10-day free trial of Affinity Designer here" (see bottom of page) https://affinity.serif.com/en-us/designer/. Then you will need to pay £50 after the trial if you want to keep using it, but as it is such a highly praised design app, I'm happy to pay this to solve the problem and also give me another designer tool that isn't over-complex but may prove to be very useful!
Simply add Affinity to Designer to the print option menu from from a docX, Pages or whatever you would normally export from to Preview, and then each time, just Print> open in Affinity Designer and Change the Resolution, and save. I can't even remember the exact tool I used in Affinity Designer to take care of this the other day, but I sussed it out in 10 minutes and it works! In fact I simply changed the resolution, saved it, and then opened it in Preview to finish off the way I normally would. However, as I learn Affinity Designer, I may find I no longer have a use for Preview. In short, if you urgently need to get a doc resolution change into preview, download the free trial of Affinity Designer, get the job done, and it gives you 10 days to decide your next move.
However, although I marked my thread as SOLVED simply because VikingOSX did indeed solve my issue, the overall problem is still with Apple. I agree with everyone who says this is unacceptable. This sort of failure to not deal with a central part of Apple software, which has not been fixed at least two months on from release, is what is expected from an amateur company. My only thinking is that since Apple shifted it's manufacturing to China, they have super-charged their 'built in obsolescence' in order to rip off the customer even more, by making everyone update whatever machine they buy every 3 years or so. Disgraceful, but until we get rid of this globalist attitude towards multinational profits first, and seeing the consumer as just a mug who will stand in a long line of other mugs waiting for every new release of a shinier product, the trend we see in this thread will become ever more widespread!!!
The world needs a new 'Apple' with out the the growing elitist attitude towards its customers!
I just opened a JPG image in Big Sur's Preview application. Set it to full-size, and then from the Tools menu, adjusted size, and resampled to 300 dpi at 2800 pixels square. This modification was then exported as a .png, and the changes to the exported image were shown by reopening that image in Preview and viewing those measurements in the Inspector. Are you referring to something else?
I think what Actxiom101 meant was that he checked the file size in Mail.app and could there see that it wasn't as large as it should be when exported with Preview.app in high resolution.
I suggest you to just try to reproduce the bug first with a few clicks before saying it's the users fault.
And you will see that the resolution is always stuck on 72dpi no matter what you do and that this is clearly a bug and should have been fixed long time ago.
I hear you. I spoke with some of my colleagues and those on new MacBook Air’s are having no issues. But those of us on older machines are. As a Mac user for 28 years, this happens every time a new OS comes out. I’m just happy everything else on my desktop still works. I think it’s optimized for the new processor.
The problem is Macs are pricey. I’d never go to a PC for price, too much of a headache. I’m just not ready to buy a new machine. Hopefully they will work this out.
Same issue - I had to put the image files on my other mac computer running 10.5 and Preview could same the image file at a smaller size. This is a BIG deal and Apple needs to address it as it's a huge oversight in Big Sur. Since this feature is used very often by me to send email images - I can't believe Apple didn't address this already. If not fixed - I'll have to Time Machine my way back to the earlier version which is not optimum obviously.
Same problem here. Apple completely broke it and it's super annoying. Trying to export PDF text as a raster image is practically useless because the result is pixelated garbage. It seems to be stuck on 72 dpi or something.
In Preview, from File, Export, the Quality slider moves, but the file size remains the same.
Running a 2014 vintage Mini, and a 2018 MacBook. Same problem experienced.

That’s user error, nothing to do with Preview. You are sending a file by e-mail and not paying attention to how Mail is handling your attachments. You should choose “Actual Size”.
Not exactly, not exporting as a PDF.
I open a JPG image, go to tools, adjust size and resize the longer dimension to 2400px at 72 dpi resolution. Save it and export it as a JPG.
For my job the image has to be JPG and under 300 KB in size. (Obviously, I didn't initially explain this clearly.) However, when I use the sliding scale to reduce the size, nothing changes.
I end up having to go to PS to reduce the size. Takes longer, basically doubling my time. It doesn't matter what format I start with, the end result is the same.
It worked almost flawlessly before the upgrade. I'm on a iMac (21.5-inch, Late 2015)
Same thing for me. I have used both the reduce size function in Save As and the adjust size function in Tools and they no longer work. I have called around and three friends say their BigSur preview mis-functions the same.

Me too. I am struggling a lot with this issue on my Macbook Pro 2016. Only can resize/compress images if you export them on HEIC format. Still not working the compression for JPEG format. Hope will be fixed soon as it very annoying!
I dunno but I am having the issue on both 2017 iMac and 2020 MBP after upgrading to Big Sur... :( Fortunately I have PS but it takes a bit more time and is less convenient for such a trivial job. It is a shame such bugs slip in such big releases.
