Changing the language is no longer available in Logic 10.6.

It is now part of macOS an can be adjusted for all apps individually: System Preferences => Language & Region => Apps

Can`t find the "language" function anymore on settings-display... anyone?

Look in the preferences instead.

Main Menu > Logic Pro X > Preferences > Display > Language
