Love the fact that Big Sur very visibly puts "charging on hold" for the batter of my Macbook Pro (which is basically always plugged in - here or there).
Suppose I'm about to head for the airport and want the battery to charge to 100% for the flight ahead. How do I tell Big Sur to do this on a one-off basis? (i.e. to revert to partial charging when next plugged in)

Alternatively, If you have "show battery status in menu bar" enabled(see @leroydouglas' screenshots) you can just click the battery icon and select "Charge to Full Now"

If you think this is small % is mission critical to your survival turn off the BHM in Preferences.

OK so you have to turn the whole thing off.
Will put in a Feature Request for a "Boost to 100%" menu option.

I faced the same situation. If you think anything is wrong displayed, then click to 'Battery preference' -> 'Restore Default'.
Does the wording "finish charing past 80% until you need to use it on battery" imply that it uses Machine Learning to "know" when you're likely to need on battery so if you have routine Travel it might be at 100% when you head for the door?

Well that would be great if that were an option on my computer. I get so excited when I see these logical answers but am often perplexed as to why I can't use them!
Which version of Big Sur are you running? As RupertC pointed out this was added in 11.1
