I have a MacBook Air (mid 2012) and I’m trying to install iMovie to edit some videos for work. I keep getting the message “iMovie can’t be installed on Macintosh SSD because macOS version 10.15.6 or later is required”. It’s showering I have Catalina 10.15.4, even though I SWEAR I just updated to the “.7”. Is there anything I can do to get iMovie or does anyone have a suggestion on a different app in which to use?

As you stated in your post, you do need macOS 10.15.6 or later in order to install iMovie. You can use the links below to help with downloading and installing macOS 10.15.7.
Download macOS Catalina 10.15.7
Then once you've updated, you should be able to install iMovie

To check what OS you are running control + click on the Apple Logo top left of screen and select About This Mac
It would appear that the above download for 10.15.7 requires 10.15.6
Try this Combo update to get 10.15.7 . System requirements for this combo update are simply 10.15
