Found a way to solve this problem.
There IS a way to increase the size of those itty, bitty icons in the top menu bar, as well as the size of fonts on the display screen.
Finder > System Preferences > Display > Resolution > Scaled > Choose one of the five different screen resolutions.
As it was set up after installing Big Sur, the Resolution is set to Default.
Change that to one of the other Scaled settings, and the problem is solved.
This setting will result in everything taking up more space on your screen, but it may be a necessary trade-off for those of us who need visual accommodations.

No. The menu bar can be made a wee bit larger via the System/Accessibilitry/Disply preference pane. Also the text can be made more readable by using the "Increase Contrast" and Reduce Transparency" checkboxes.
iTunes is history. Music is handled by the Music.app. Audiobook are now in the Books app.
To sync your iPod connect it with its cable, open a Fionder window and click on the iPod in the sidebar. The you'll get this:
Go into display from system preferences and click "scaled" under resolution and you can change the default size of font.
Just some food for thought. That will also reduce the resolution of the screen, i.e. make things look bigger, and you'll lose some real estate on the screen. On a 27" screen it's not much of a loss but on smaller laptops it could be.
Yes, that worked and did allow increased size of the menu bar items & fonts. BTW, it also increased the font size & displays within all the Apps such as Email, Messages, Safari, etc.

Thank you for your speedy assistance. It did help to increase contrast. Setting Menu Bar size to Large helped just a little.

I didn't measure but I couldn't see the change in menu bar size between default and large. But then my eyes are getting old and tired.
Since upgrading to Big Sur, I cannot find iTunes so therefore cannot sync my iPod Touch. Please help, thank you!
Thank you so much for your help. I have now been able to sync my music. Although I have to say iTunes is faster IMO. I have only just downloaded Big Sur and am trying to get used to it. Thanks again.
