Big Sur Update Broke XCode and GoodNotes

Did anyone else find that once they downloaded Big Sur, half of their apps either broke entirely or just wouldn't update?

GoodNotes is now completely broken (image below). Menus are open, screens are zoomed, and I can't click on a dang thing. XCode is also stuck at 75% updated now for a day and a half, while other apps simply aren't updating AT ALL.

I could also use some guidance on changing the color of my menu bar, because now it's black and I can't see any of the options when dimmed.
