I disable Automatic Ear Detection on my iPhone XS. The next day it is reenabled. I’m pretty sure this has to do with my iPhone because I bought a new pair of AirPods and the problem continues even with the new AirPods. I’ve restarted the phone, it’s patched updated, etc.

This happens to me too. It started happening regularly with the upgrade to iOS14. I suspect the Automatic Device Switching feature may be to blame, in that you disable the Automatic Ear Detection on your phone, but the AirPods connect to a different device during the day that hasn't disabled that feature, and upon reconnecting to the phone it's re-enabled.
Unless that setting is per-AirPods and not per-device.
It's very annoying.
I'm in the same boat. I've got airpods and airpods pro. Both do this. I agree about this having to do with the auto device switching. I'd have to do more testing but away from home with only my phone it stopped happening. Once home, and near my ipad, it started happening again.
I have a new iPhone 12 now and the problem is continued.
Uhmmm Apple can you step in here? I just ordered the AirPods Pro thinking this would fix. I feel tricked.
You can always return them. I will say the airpods pro are much nicer than the airpods in almost every way, but they definitely have the same issue.
