I have noticed that after I updated my MacBook Pro to Big Sur, at night the clock in the upper right corner becomes almost transparent, instead of staying white. How can this be fixed?

Do you have your System Preferences : Desktop & Screen Saver set to Dynamic for your Desktop picture? Are you using any third-party appearance control menu bar item that may have a collateral effect on dimming your time? I see no other tweaks in System Preferences that can account for your date/time dimming at 10 pm.
It sounds like you have Do Not Disturb enabled in the evening.
Yes I have, but the same problem happens even if I don't. I don't think so. This only started happening after I installed Big Sur.
You can visit the System Preferences : Accessibility : Displays panel and select Reduce transparency. This will make the menu bar stygian, and may improve contrast for the time information. I also happen to use a very dark wall paper with Big Sur, so I haven't noticed a change in the clock presentation at night.
That didn't work because the date and time are the only things at the menu bar that isn't white at night (more specifically starting at 10pm). Attached there is a picture of what I mean. The thing is that this only happens at night, during the day it's normal, as in it is white.
