are you sure that you're not just seeing the light/dark modes change daytime vs nighttime?
If you go to Settings > Display & Brightness and look under Appearance, is Automatic turned on?
If that switch is ON, try turning the switch OFF and then toggle the checkmark above between Light and Dark modes..

This has been all the latest craze in features lately.. phones, tables, computers..
If you don't like the dark mode, just leave that switch for Automatic turned off and Light selected.

There are colours on my initial screens and in some apps, but mail, settings, google and maybe more I haven’t opened, are white on black. I’ve played with lots of the other buttons including giving everything different sorts of colour tinges, but that just makes the white on black more difficult to read.
When I did what you suggested the first time there was a tick against the grayscale which wouldn’t change when I touched it, but went when I pressed the colour tinge buttons.
I’ve turned the phone on and off about 4 times too, now have it on charge and will look at it tomorrow morning. It’s 1am here almost.
Yes, that’s it. I worked it out last night as I realised there was a time issue involved and then couldn’t post to say so for some reason.
Something changed on my phone on Sunday. The screen went black and it was impossible to read. It had dimmed completely all on its own. I put that right once I realised what it was. It must also have gone to automatic dark mode at the same time. I don’t think anything else has changed.

in Settings > Accessibility > Display & Text Size, make sure the switch for Color Filters is turned off.. or turn it back on and then off again. Maybe even restart your phone?
Thank you, but I’ve tried all of those several times, plus the Zoom solution I’ve seen suggested. Nothing works.
Is it literally all grayscale with no color? Those other switches like smart invert, classic invert also mess with the displayed colors..
That worked !
So same time as last night same thing again - white on black. All steps followed as before, nothing changes. Realise a number of my apps - translation, Covid - are also affected.
Check the Zoom Filter setting: Accessibility > Zoom > Zoom Filter > Turn Gray Scale ON/OFF
