Can I have different subscriptions and/or purchases be charged to different payment methods?
Now that multiple payments can be associated with an Apple ID, can I have different subscriptions and/or purchases be charged to different payment methods?

Not unless you are willing to swap the cards around to the primary card just before the payment is due. There isn't a way to assign a specific subscription to a specific card.
