on my new Macbook Air iOS 11.0.1 I can't get a "compose new message" icon in the tool bar. I can press command+N and compose an e-mail but there used to be a square with a pen inside it to denote compose. Why is this missing?

I just upgraded to Big Sur yesterday and could not believe that the Compose Mail icon was missing. You can find it by going to Mail, View, Customize Toolbar. Grab the New Message icon (which looks like it always has) and drag it to your Mail toolbar. If you look at the bottom of the Customize Toolbar window, you can drag the entire set of Default icons to your toolbar. Ironically, that set includes the New Message icon. Why would the Default icons not be in the toolbar when you upgrade to Big Sur? You have to dig thru all these steps to activate the Default setup??? Nonsensical.

It was there by default on mine but if it isn't, you should be able to add it via View menu > Customize Toolbar.
I'm on macOS 11.0.1 (same version as you but note that iOS is for iPhones) with Mail version 14.0 and it has the compose icon by default on the tool bar and it is also in Customize Toolbar. Sorry, I don't have any idea why it is missing on yours. If you don't get a reply from someone that has another idea, you may want to contact Apple Support. It's a little bit more to the right now
I have retrieved the Compose Mail icon, so that's sorted. But I still have the problem of flagged mail not having a flag next to them in the incoming mail list. I can open the "flagged" mail to see what I flagged, but the list doesn't show flags by default in the list. This seems to be a problem with OS Big Sur.
I looked on Customize Toolbar as you suggested, but the "compose" icon doesn't appear there either. Maybe this iOS doesn't have that. So - another suggestion?
Thanks for the tip about OS (not iOS as I thought). I see I have posted another question and wrote iOS, but now I know that is wrong.
