Unwanted, half finished, copies of notes sent to my email. How do I turn it off?

I’ll bet they’re housed somewhere else. Check Settings > Notes > Accounts.

These notes are stored within the device...Very basic storage. I type them and as I type them, and make any correction, the copies appear in my email.

That is not a standard feature of Apple’s Notes app. Very likely, it’s a feature (bug?) associated with wherever you chose to house your notes.
