I want to replace my 10 year old iMac desktop with a MacBook. When I make an appointment at
Apple store, do I need to bring the iMac desktop with me when the iMac desktop email, folders, files need to be copied to the MacBook?

You can copy all of files from old iMac to new MacBook Pro with Migration Assistant.
You don't need to take your old iMac to Apple Store.
